Oat My Goodness Cookies, with choc chips and raisins

I don't know what it is about an oatmeal raisin cookie, but it always brings me the taste of home comfort. This cookie delivers on that, with plump juicy raisins, warming cinnamon and nutty pecans. Mini chocolate chips scatter a burst of indulgence through the cookie without overwhelming the other flavors. You have to give these a try!


This recipe is one of my go-to recipes when I need a little bit of something sweet. It has all the good stuff in it. Delicious oat-y texture, sweet raisins and a dash of chocolate to make it feel really luxurious. This recipe is not only easy, but freezable, making it perfect for making in big batches.


Given the simplicity of the ingredients in this recipe, the better the quality of the ingredients, the more flavor and texture as a result. I like to use Bob's Red Mill Organic Old Fashioned Rolled Oats, as they really enhance the overall texture of the cookie. I would not recommend using quick cook oats as it will not hold up as well in the baking process.


Cookies For Later

One of my favorite things is being able to grab a cookie from the freezer, throw it on a sheet pan, and enjoy less than twenty minutes later, no muss, no fuss!


It's so easy to freeze cookies once you know how, and I like to set aside about half a batch or more each time I make them for freezing.

This recipe is one of my favorites, a simple oatmeal raisin cookie. The results are delightfully spiced, comforting, and a little crumbly. Perfect for a little pick me up after a long day, and with a cup of tea of course!



How To Freeze


When portioning out cookies (I use a scoop), simply layer them with parchment/greaseproof paper or freezer paper in between each cookie. This prevents them from sticking together. I then package them in 4-5 pieces in a zip-lock bag, and simply throw in the freezer. It's as simple as that. When you are ready to bake, preheat the oven to 375F, and then follow the instructions of the recipe, adding two minutes to the overall baking time. Easy!
