Everyone loves a slice of banana bread right? It works for breakfast, morning snack, late night munchies, pretty much any time of day. But probably the best thing about banana bread is how ridiculously simple it is to make, which is why I've put this in my kids collection. It also uses up old bananas - so its easy to have an excuse to make it!
This banana bread uses a secret ingredient to keep it super moist and fluffy. You won't believe me when I tell you its mayonnaise! Yes, that's right. Don't run away in horror, please trust me on this one, it is so good. After all, mayonnaise is really just eggs and oil, and those are ingredients found in many baked goods.

I made this recipe on a day when we absolutely did not need any more baked goods in the house. We already had a number of cherry bakewell bars left over from a post a few days prior, as well as half a chocolate cake that I made for my friend's birthday. But, at the end of the day, baking is my therapy! So who am I to say no to a couple of sad looking bananas?
I was inspired to try adding the mayonnaise as an ingredient as I have previously made chocolate mayonnaise cake and found the results to be incredible, so why not in banana bread I thought? Turns out I was right.
Baking With Kids
Now, if you are making this banana bread with kids, you can leave out the walnuts if that's something they will turn up their noses at. While you can leave it plain, you can also swap the nuts for some chocolate chips if that's their thing. Whatever you add in, it is sure to be an enjoyable treat. Another adjustment you can easily make is to reduce the sugar. You can make this recipe with only half a cup of sugar total if you prefer a less sweet outcome, or you could swap some sugar for apple sauce instead. Just be careful not to unbalance the overall thickness of the batter.
The Process
The process for this banana bread couldn't be simpler since its all done in a single bowl. You can use a stand mixer if you so wish, but honestly that's more cleaning up to do!
One tip I do have for making your life simpler is to use some clips to keep your parchment paper in place while you pour in the batter. Parchment paper doesn't have any weight and therefore can move around a lot, risking the batter getting accidentally stuck to the sides. Using a couple of clips makes things so much simpler, and you just remove them before its time to bake.
